A Mental Break. (Spring) Not Necessary.

Everyone goes on spring break it seems.

Not me….not really, and definitely not typical.

My junior year of college I went on spring break to Florida with a couple girlfriends. It was nothing crazy. And then my senior year of college I made the huge trek from Minneapolis to Chicago to stay with one of my best friends. Huge, right?!

I had friends who took out loans to go on spring break. Yes, loans! I could never justify that for a week of crazy, exotic adventure.

In my true fashion, I continue to dance to my own beat (i.e. Your Adult Spring Break).

I don’t need spring break to remind me that I need a break. Then again, I never wished for my “breaking” point to come where I’d be forced to say….time for a mental, not spring, break.

But here I am. I am reminded that when we tell God our plans, he laughs. (Of course Ryan reminded me of this.)

So God laughed, my perfectly perfectness perfection perfect (!) plans failed. Yet somehow I believe it might have been just what I needed right now.

Time for a mental break. It just so happens that it’s falling during the spring. But spring is not necessary for this type of break. When you need it right now, it probably means you needed it months ago.

In just a few short days, we’re heading out of dodge and into beautiful Sedona, AZ. Just Ryan and I. (Don’t worry, I already apologized to Reagan and Fiona.)

I can’t wait to relax. I can’t wait for a little adventure. I can’t wait for the scenery. I can’t wait for the solitude. I can’t wait for a lack of thinking. I can’t wait for so much thinking. I can’t wait to not be at everyone’s call 24/7. I can’t wait for inspiration. I can’t wait for long morning breakfast sessions. I can’t wait for rejuvenation.

I can’t wait for my mental break. I truly need a week or more, but I’m taking just a few days.

I learn more and more each day the true meaning of a healthy lifestyle. Remember, there is so much more to a healthy equation than simply just eating right and exercising.

The mind is a powerful tool. As a matter of fact, it is likely to be my most powerful tool – in good times and in bad. Now, if I could just harness it.

I’m finally giving my mind the kind love it needs and deserves….a mental break.

On a Stick. And Gluten Free.

It’s not even State Fair time yet, but recently I got a weird craving for a food on a stick. I’ve been so whacky lately, so really it doesn’t surprise me that much!

Here are some things I’ve heard of “on a stick” at the fair:

  • pizza
  • deep-fried butter
  • deep-fried Snickers
  • deep-fried dill pickle
  • alligator
  • cheeseburger
  • cheese (and, go figure, deep-fried cheese)

Most of those are not gluten free and quite honestly downright nasty to me, so truth be told I’ve never had an “on-a-stick” fair food. I’ve survived!

With just 3 simple, gluten-free items you can have your very own “on a stick” today! Better yet, with this recipe you can eat the whole thing, stick included!

Un-Pig in a Cheese Blanket

Ingredients
Directions
  1. Cook the chicken apple sausages until browned to your liking.
  2. Using a toothpick, prick a few holes in the top of the sausage until about halfway through the sausage (to prepare a hole for the stick).
  3. Insert stick.
  4. Cover sausage with the cream cheese. (You will notice I lathered it on. Ryan and I liked it best this way.)
  5. Enjoy.

Only Eat Breakfast if You Want

They say that breakfast is the most important meal of the day. I would agree. But if you were my client, I would not make you eat it. Why? Because I think too often people’s minds are filled with this notion. And in return they reach for a Snicker’s Bar or other junk food just to eat something for breakfast.

If you’re not hungry in the morning, then don’t make yourself indulge in a big breakfast. But as for me….breakfast is key! Ryan and I are funny like that. We could wake up for an early morning flight at 4am and be starving. It doesn’t matter when we wake up. It only matters that when we do wake up, food is readily available.

But again, don’t just eat just to eat.

If you are starving like we typically are and have a little time, here are 4 breakfast ideas:
  1.  Gluten-Free Baked Apple Oatmeal A La Mode
  2. Tofu Scramble
  3. Breakfast Stir Fry
  4. Really big appetite? Do a fresh-from-the farm theme! Ryan loves this one: 2-3 eggs, cooked to your liking + Applegate Organic Chicken Apple Sausage + 2 slices toast (whole grain, high fiber for Ryan; Udi’s Gluten Free for me) topped with the new Laughing Cow Smooth Sensations Strawberries and Cream (1/3 less fat) and “sprinkled” with fresh, sliced strawberries
If you are not hungry and short on time, just grab something small for the road.  Here are 3 quick breakfast ideas:
  1. Rice cakes topped with your favorite topping (need ideas? here are 16 of them)
  2. Apple slices smothered with the new Laughing Cow Smooth Sensations Cinnamon Cream (1/3) less fat) and sprinkled with cinnamon
  3. Greek Yogurt Parfait. Grab a small container. Layer the bottom with your favorite Greek Yogurt, then fruit or granola, more yogurt and topped with fruit or granola. Put a cover on it, and enjoy in an hour or so when you are hungry.

And while we have breakfast on the mind, check out these four tips for starting your day off right! (<– There could be more breakfast ideas there!)
