Gluten-Free Baked Apple Oatmeal A La Mode

Is your belly still full from the massive Thanksgiving meal yesterday? Mine definitely is! But the good news is that I absolutely enjoyed the day, but am thankful I don’t eat like that everyday. It was a treat – I like keeping it that way!

Get your breakfast back on schedule today with a gluten-free baked apple oatmeal a la mode!  I am a huge fan of my Trader Joe’s gluten-free oats and Coach’s Oats Steel Cut Oats. I have been making so many different things with them for breakfast. I shared my Gluten-Free Pumpkin Oatmeal Recipe already. And today I’m ready to dive into the Gluten-Free Baked Apple Oatmeal A La Mode!

Ready for some simpel breakfast fun?

Ingredients

  • 3 apples
  • gluten-free oats
  • 1 tbsp flax
  • 4.5 tsp ghee butter (remember, you can always use real butter if you’d like – I just prefer the ghee)
  • (3) cubes Mrs. May’s naturals almond crunch
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • honey
  • Greek yogurt

Directions

  1. Preheat the oven to 400 degrees
  2. Line your pan with tinfoil, and drizzle a little water on the tinfoil
  3. Wash 3 apples, and cut the core out half way (don’t cut all the way to the bottom or there will be nowhere for your “stuffings” to sit)
  4. Mix together: flax, cinnamon and nutmeg
  5. Place 1.5 tsp ghee in each apple
  6. Place 1 cube Mrs. May’s naturals almond crunch in each apple
  7. Place 1 drop of honey in each apple
  8. Place 1/3 (flax, cinnamon, nutmeg) mixture inside each apple
  9. Place in oven, and bake for 25 minutes
  10. Once the apples are done, chop up one, add it to your oatmeal and place a dollop  of Greek yogurt (or 7!) on top

15 Simple Gluten-Free Thanksgiving Items

Typical breaded stuffing and pumpkin pie might be out for us g-free’ers this time of year, but that doesn’t mean you can’t enjoy a delightful, gluten-free Thanksgiving!

We go to my sister and brother-in-laws each year for the holiday. My brother-in-law is a fantastic cook and there are several things he always ensures are gluten free for me. Last year was nothing short of fabulous!

2010 Gluten-Free Thanksgiving Meal

I am fortunate that family and friends (for the most part) are very supportive. But if I were at home celebrating Thanksgiving with just Ryan and myself, the Thanksgiving meal would likely look much different. Remember, I like to facilitate ease and simplicity with my gluten-free cooking and baking when at all possible.

 

Here are 15 simple, gluten-free foods for your own Thanksgiving:

  1. Raw Nuts (munch on these while waiting around, talking and just being – use a nutcracker if you can, as it will help you to avoid overeating handfuls upon handfuls!)
  2. A Light and Gluten-Free Fall Salad (let’s get this party started!)
  3. Sweet Potatoes (plain, with brown sugar, butter, Greek yogurt, etc.)
  4. Turkey (buy it plain and add to it fresh spices and herbs, lemon, garlic, etc. Be cautious of pre-made turkey that have non-gluten-free seasonings.)
  5. Acorn Squash Stuffed Quinoa & Blue Cheese
  6. Roasted Pumpkin Seeds (flavor the way you like them)
  7. Cranberry Sauce (try this simple one: Cranberry Sauce with Clementines and Cinnamon)
  8. Roasted Brussels Sprouts, Grapes & Walnuts
  9. Gluten-Free Bread Stuffing (note: I like Udi’s Gluten-Free Bread. substitutions I would make: ghee butter in place of the salted butter and my homemade chicken broth in place of the pre-made chicken broth – make up a huge batch of it, and freeze, taking out little-by-little for recipes like this, saving you time and money!)
  10. Gluten-Free Cheesy Mashed Potatoes (I would swap the Parmesan for some of my beloved Laughing Cow Cheese. Heck, I’d prefer the Roasted Garlic Cheesy Mashed Potatoes in place of “real” white mashed potatoes any day!)
  11. Roasted Vegetables
  12. Gluten-Free Pumpkin Pie
  13. Gluten-Free Baked Apple Crumble
  14. Wine! –> a Thanksgiving staple
  15. Really Vanilly Whipped Cream (cream – real – whipped cream)

Ps. Wondering why “gravy” was not on the list? I don’t like it. I would never make it. So I’m not going to be fake and put it on here as I would eat it myself:) I think you’ll understand. But just in case you don’t, here is a gluten-free gravy recipe!

Acorn Squash Stuffed Quinoa & Blue Cheese

Along with the Roasted Brussels Sprouts, Grapes & Walnuts I made recently, I also made an Acorn Squash Stuffed Quinoa & Blue Cheese recipe.

If you haven’t noticed yet, squash and pumpkin are staples in the Hoffman household this time of year. I could place a squash in the oven with just a drizzle of olive oil, bake it and eat it plain – as a dessert – that’s how much I love it!

But because I’m not just thinking about myself, but Ryan too, I’ve started “spicing” my squash and pumpkin up the best I can! What I did with the Acorn Squash definitely had the jazz I think Ryan loved! It’s easy, healthy, filling and of course, gluten free!

Acorn Squash Stuffed Quinoa & Blue Cheese

Ingredients

Instructions

  1. Preheat oven to 425 degrees
  2. Once the Acorn Squash is halved, de-seed it
  3. Mix together in a small bowl: 1 tbsp olive oil, pinch of sea salt, pinch of pepper and about 2 tsp of the Italian herb blend
  4. Brush mixture onto the squash halves
  5. Place squash (facing down) in oven for 25 minutes
  6. Meanwhile, make your quinoa (Place 1 c. of water with 1 c. of quinoa in a small pot. Bring to a boil. Reduce and simmer, uncovered, for about 10-20 minutes or until “fluffy.”)
  7. Transfer the quinoa to a small mixing bowl and add to it: chopped parsley (~ 1 tbsp), chopped cilantro (~1 tbsp), Italian herb blend (~ 1 tbsp), salt and pepper to taste, 1 tbsp olive oil, 2 tbsp apple cider vinegar. Mix all ingredients
  8. Once the acorn squash is ready, take it out of the oven and stuff it with the quinoa mixture
  9. Top it off with The Laughing Cow Light Blue Cheese
