I think that's awesome, Sarah! My hubby is an excellent chef, and always cooks by feel/taste rather than by measurement. As a lousy cook that needed a recipe to follow, that used to drive me crazy! But as I become better in the kitchen, now I've learned to take liberties with recipes to accommodate my own tastes. (I feel so cool when I do that, too! LOL!) I can't wait for the day when I can go to the fridge and pantry and grab a handful of crazy ingredients and whip up my own masterpiece!

Not at all. A top chef I know here in Canada has told me on a number of occasions that the best chefs do not use set measurements and that the best measuring devices are our hands over commercial measuring cups (for dry ingredients of course). Since he is on Canada's Culinary Team I think I will go with it... ;)

My mother never used measured quantities in her recipes. It drives everyone in the family crazy now that she is gone because they can not make her most famous foods. All except for me. Why am I successful? For this exact reason. Each time I cook the amounts vary based on who is eating, the quality of the ingredients (I taste everything before it goes in - green peppers and celery in particular) & the quantity of the final product, it all makes a difference to the meal.
